Instructions

  1. Prepare Your Ingredients: Chop the chicken into bite-sized pieces. Slice the bell peppers and green onions. Drain and chop pineapple if using whole fruit. Mince the garlic and ginger to prepare for cooking.
  2. Cook the Chicken: Heat oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-7 minutes until golden and cooked through, stirring occasionally. Remove chicken from pan and set aside.
  3. Stir Fry the Vegetables: In the same skillet, add more oil if needed. Add garlic and ginger and cook until fragrant. Then add bell peppers and snap peas, stir-frying for 3-4 minutes until crisp-tender and colorful.
  4. Combine and Add Pineapple: Return cooked chicken to the pan. Add pineapple chunks and pour the teriyaki sauce over everything. Stir well, allowing the sauce to thicken slightly and coat the chicken and vegetables evenly.
  5. Finish and Garnish: Turn off heat. Sprinkle sliced green onions on top. Optionally, finish with toasted sesame seeds or a drizzle of sesame oil. Serve immediately while warm and saucy.
