Chicken and Sauce
- 4–6 chicken thighs or breasts, skinless and boneless
- ⅓ cup honey
- 4 garlic cloves, minced
- ⅓ cup soy sauce
- 1 cup chicken broth
- Salt and pepper, to taste
- 1 tablespoon olive oil or butter
Noodles
- 6 oz dried egg noodles or your favorite pasta
Optional Garnishes
- 2 green onions, chopped
- Chopped parsley
- Toasted sesame seeds
- Prepare the sauce and chicken: In a small bowl, whisk together honey, soy sauce, minced garlic, and chicken broth until well combined. Season the chicken lightly with salt and pepper. Place the chicken in the slow cooker and pour the sauce evenly over the top.
- Slow cook the chicken: Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and can be easily shredded with a fork.
- Shred the chicken: Remove the chicken from the slow cooker and shred it into bite-sized pieces using two forks. Return the shredded chicken to the slow cooker and stir well to coat with the sauce.
- Add the noodles: Add dried egg noodles directly to the slow cooker and stir to combine with the sauce. Cover and cook on low for another 20-30 minutes, or until the noodles are soft and have absorbed the flavorful sauce.
- Final touches and serve: Stir everything well and adjust seasoning with salt and pepper if needed. Garnish with chopped green onions, parsley, or toasted sesame seeds before serving for a fresh color and texture contrast.
Notes
- Use chicken thighs for juicier, more tender meat that doesn’t dry out.
- Sauté garlic in olive oil or butter before adding for enhanced flavor.
- Add noodles later in cooking to prevent them from becoming mushy.
- Taste and adjust salt and pepper after cooking to suit your preference.
- If sauce is too thin after noodles cook, thicken with a cornstarch slurry and cook a few more minutes.
