Instructions

  1. Sear the Chicken: Heat olive oil in a large pot over medium-high heat. Season the chicken breasts with Cajun seasoning, salt, and pepper. Cook the chicken until golden brown on both sides and fully cooked through. Remove the chicken from the pot and set aside to rest.
  2. Sauté the Garlic: In the same pot, melt the butter and add the minced garlic. Sauté for about 1 minute or until fragrant, being careful not to burn the garlic as it will make the sauce bitter.
  3. Add Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine the flavors. This liquid base will cook the pasta and create the rich Alfredo sauce.
  4. Cook the Pasta: Add the fettuccine directly into the pot, making sure it is fully submerged in the liquid. Cover and simmer, stirring occasionally, until the pasta is tender and has absorbed most of the sauce, about 12-15 minutes.
  5. Finish the Sauce and Combine: Slice the cooked chicken into bite-sized strips and return it to the pot. Stir in the freshly grated Parmesan cheese until melted and silky smooth. Adjust seasoning with salt and pepper to taste.
