Homemade Crispy Chicken Burger

A Homemade Crispy Chicken Burger recipe delivering the perfect crunch, juicy and tender chicken, and fresh toppings. This easy-to-make, flavorful burger uses simple ingredients and expert techniques to rival your favorite takeout with a healthier, customizable, and homemade touch.

Ingredients

Chicken

  • Chicken thighs or breasts – 4 pieces (thighs for more moisture and flavor, breasts for a leaner option)
  • Buttermilk or yogurt – 1 cup (for marinating)

Crispy Coating

  • All-purpose flour – 1 cup
  • Cornstarch – 1/2 cup
  • Paprika – 1 tsp
  • Garlic powder – 1 tsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp

Burger Components

  • Burger buns (soft brioche or potato buns) – 4
  • Fresh lettuce leaves – as needed
  • Tomato slices – 4-8 slices
  • Pickles – as needed
  • Your favorite sauce (spicy mayo, garlic aioli, or barbecue sauce) – as needed

Instructions

  1. Prepare the Chicken: Trim any excess fat and pound the chicken pieces to an even thickness for uniform cooking. Marinate the chicken in buttermilk mixed with a pinch of salt and your choice of spices for at least 30 minutes to ensure tender, juicy meat inside the crispy coating.
  2. Make the Crispy Coating: In a large shallow bowl, combine flour, cornstarch, paprika, garlic powder, salt, and pepper. Dredge each piece of marinated chicken in this dry mix, pressing firmly so the coating adheres well.
  3. Fry the Chicken: Heat oil in a deep pan or fryer to 350°F (175°C). Carefully place the coated chicken pieces into the hot oil and fry for 4–5 minutes on each side until golden brown and cooked through. Remove and drain on a wire rack or paper towels to maintain crispness.
  4. Assemble the Burger: Lightly toast the buns to add texture and warmth. Spread your sauce of choice on the bottom bun, then layer fresh lettuce, tomato slices, the crispy chicken, and pickles. Finish with the top bun. Press gently to hold all ingredients without crushing the crunch.
  5. Serve and Enjoy: Serve immediately with your favorite sides. Enjoy the harmony of crunchy, juicy, and fresh flavors that make this burger a standout.

Notes

  • Double dredge for an ultra-crispy, thick crust: dip chicken back into buttermilk after the first flour coat.
  • Maintain frying oil temperature at 350°F for even cooking and less greasy results.
  • Allow breaded chicken to rest for 10 minutes before frying to help coating adhere better.
  • Drain fried chicken on a wire rack to keep the crust crispy instead of soggy.
  • Toast buns lightly to prevent sogginess under juicy chicken.
