Dough Ingredients

  • 3 1/2 cups all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 1/4 cups warm water (about 110°F/43°C)
  • 2 tbsp honey or sugar (use maple syrup for vegan version)
  • 1/4 cup olive oil, plus extra for drizzling
  • 1 tbsp fresh rosemary, finely chopped
  • 4 cloves roasted garlic, mashed
  • 1 tsp sea salt or kosher salt (plus extra for sprinkling)

Instructions

  1. Activate the Yeast: Dissolve the active dry yeast and honey or sugar in warm water. Let it sit for 5 to 10 minutes until frothy and bubbly to ensure the yeast is active for a successful rise.
  2. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, chopped fresh rosemary, roasted garlic, and salt. Slowly pour in the yeast mixture and olive oil. Knead the dough until it becomes smooth and elastic, approximately 8-10 minutes by hand or 5 minutes using a stand mixer with a dough hook.
  3. First Rise: Transfer the dough to a lightly oiled bowl, cover with a clean towel or plastic wrap, and place it in a warm spot to rise for 1 to 1.5 hours, or until it doubles in size.
  4. Shape the Muffins: Punch down the risen dough to release air. Divide it evenly into muffin tins or individual molds. Use your fingertips to gently create small dimples on the top of each muffin, which enhances texture and allows olive oil to pool.
  5. Final Proof and Bake: Let the muffins rise again for 20 to 30 minutes. Preheat your oven to 400°F (200°C). Before baking, drizzle additional olive oil and sprinkle sea salt on top of each muffin. Bake for 15-20 minutes until the muffins develop a golden brown, crunchy crust.

Notes

  • Use fresh rosemary for the best aroma and flavor; dried rosemary can be used but reduce quantity to avoid overpowering the muffins.
  • Do not omit olive oil, as it contributes to the fluffy interior and crispy exterior.
  • Maintain oven temperature closely to prevent burning or underbaking the crust.
  • Allow adequate rising times for light and airy texture in the muffins.
  • Creating dimples on the dough helps olive oil collect in pockets, enhancing the flavor and crunch.
