Instructions

  1. Prepare the Dough: Warm the milk slightly and mix it with the active dry yeast and 1 tablespoon of brown sugar. Let it sit until the yeast activates and becomes frothy, about 5-10 minutes. In a large bowl, combine the fat-free Greek yogurt, egg whites, and baking powder. Gradually add the flour and salt to this mixture, then combine it with the yeast mixture. Knead the dough until smooth and elastic, about 8-10 minutes.
  2. Let the Dough Rise: Place the dough in a clean bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Prepare the Filling: While the dough is rising, mix together the brown sugar, cinnamon, and honey or maple syrup to create a sweet, flavorful cinnamon filling.
  4. Roll and Fill the Dough: Once the dough has risen, roll it out on a floured surface into a large rectangle. Spread the cinnamon filling evenly over the dough, then roll it up tightly from the long side into a log.
  5. Slice and Second Rise: Cut the rolled log into even slices and place them in a greased baking dish, leaving some space between each roll. Cover the dish and let the rolls rise a second time for about 30 minutes to develop a fluffy texture.
  6. Bake the Rolls: Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 20-25 minutes or until golden brown and cooked through. Let them cool slightly before serving or glazing.
