  • 200g sweet potato noodles (dangmyeon)

Vegetables

  • 1 medium carrot, julienned
  • 100g fresh spinach leaves
  • 56 shiitake mushrooms, sliced (dried or fresh)
  • 2 green onions, thinly sliced

Protein

  • 150g thinly sliced beef or 200g firm tofu, sliced

Seasonings and Garnishes

  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce (use tamari for gluten-free)
  • 12 teaspoons sugar or honey
  • 2 tablespoons sesame oil
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Prepare the Sweet Potato Noodles: Boil the sweet potato noodles according to package instructions, about 6-7 minutes, until soft but chewy. Drain and rinse under cold water to stop cooking. Cut noodles into manageable lengths and set aside.
  2. Sauté the Vegetables: Heat a little sesame oil in a large pan or wok over medium heat. Add minced garlic and stir quickly until fragrant. Add julienned carrots, sliced shiitake mushrooms, and spinach. Cook each just until tender but still crisp. Remove the vegetables from the pan and set aside.
  3. Cook the Protein: In the same pan, cook the thinly sliced beef or tofu with a splash of soy sauce and a pinch of sugar until browned and cooked through. This adds rich flavor to the dish.
  4. Combine Everything: Return the cooked vegetables to the pan with the protein. Add the drained noodles, then pour in soy sauce, a little sugar or honey, and an extra drizzle of sesame oil. Toss gently over medium heat for 2-3 minutes until everything is well coated and heated through.
  5. Garnish and Serve: Transfer the japchae to a serving dish. Sprinkle with toasted sesame seeds and chopped green onions. Optionally, add julienned red peppers for color. Serve warm or at room temperature.
