Instructions

  1. Prepare the Chicken: Season chicken breasts or thighs with salt and pepper. In a large skillet, melt butter over medium heat and sear the chicken for 4-5 minutes per side until golden brown and almost cooked through. Remove from skillet and set aside.
  2. Cook the Garlic and Rice: In the same skillet, add a little more butter and sauté minced garlic until fragrant, about one minute. Add the rice and stir to coat grains in the butter and garlic.
  3. Create the Creamy Sauce: Slowly pour in the chicken broth while stirring to loosen browned bits in the pan. Bring to a simmer so the rice absorbs most of the liquid. Add heavy cream and grated Parmesan cheese, stirring constantly to melt the cheese and thicken the sauce.
  4. Combine Chicken and Rice: Nestle the partially cooked chicken back into the skillet, covering it with the creamy rice mixture. Cover the pan and simmer gently for 10-15 minutes until the chicken is fully cooked and rice is tender.
  5. Finish with Fresh Herbs: Sprinkle chopped fresh parsley over the dish to add brightness and color. Serve warm.
