Instructions

  1. Cook the Bacon: Fry the thick-cut bacon slices in a skillet over medium heat until crispy to your liking. Transfer to a paper towel-lined plate to drain excess grease, then chop into bite-sized pieces.
  2. Prepare the Jalapeños: Slice the fresh jalapeños into thin rings, removing seeds if you want to reduce heat. Optionally, sauté them briefly in the reserved bacon grease for extra flavor or use them raw for a sharper heat.
  3. Mix the Filling: In a bowl, combine the softened cream cheese, shredded cheddar cheese, cooked bacon pieces, and jalapeño slices. Season with garlic powder, salt, and black pepper to taste, and stir until well blended and evenly mixed.
  4. Assemble the Burritos: Lay the flour tortillas flat. Spoon a generous amount of the bacon jalapeño popper filling onto each tortilla. Fold in the sides and roll tightly from one end to the other, making sure the filling is evenly distributed.
  5. Grill the Burritos: Heat a grill pan or skillet over medium heat. Place the burritos seam-side down on the pan and grill for 3 to 4 minutes on each side, pressing gently with a spatula. Grill until the tortillas turn golden and crisp and the cheese inside melts thoroughly.
