Instructions

  1. Prepare the Zucchini: Grate fresh zucchini and gently squeeze out any excess moisture using a clean kitchen towel or paper towels to ensure muffins stay moist but not soggy.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the eggs, vegetable oil, sugar, and vanilla extract until smooth and combined, forming the moist base of the batter.
  3. Combine the Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt to evenly distribute the leavening agents and spices.
