Ingredients

Scale

Primary Ingredients

  • 2 cups fresh or frozen berries (blueberries, chokecherries, or a mixed blend)
  • 1/4 cup water
  • 1/4 to 1/3 cup sugar or honey (adjust to taste)
  • 1 tablespoon lemon juice (freshly squeezed)

Thickener

  • 1 tablespoon cornstarch or arrowroot powder
  • 2 tablespoons cold water (to make slurry)

Instructions

  1. Prepare the Berries: Rinse fresh berries thoroughly or measure frozen berries and allow to thaw slightly to ensure even cooking and optimal flavor release.
  2. Cook Down the Berries: Combine the berries and water in a medium saucepan over medium heat. Bring to a simmer, stirring occasionally, until the berries release their juices and soften, about 5-7 minutes.
  3. Add Sweetener and Lemon Juice: Stir in sugar or your preferred sweetener along with freshly squeezed lemon juice. Taste and adjust the sweetness to your preference.
  4. Thicken the Sauce: Mix cornstarch or arrowroot powder with cold water to create a slurry. Slowly pour this mixture into the simmering berries while stirring continuously until the sauce thickens and becomes glossy, usually within 2 minutes.
  5. Cool and Serve: Remove the sauce from heat and allow it to cool slightly. Serve warm or chill before serving, depending on your recipe needs.

Notes

  • Use fresh berries whenever possible for the most vibrant flavor and color.
  • Add sweetener gradually and taste frequently to avoid over-sweetening.
  • Stir consistently when adding the thickener to prevent lumps and ensure a smooth texture.
  • Allow the sauce to cool a bit before serving to improve consistency and flavor melding.
  • Wojapi Berry Sauce tastes better when made a day ahead and stored in the refrigerator.
