  • 12 tbsp maple syrup or sugar (to taste)
  • ½ tsp cinnamon (optional)

Glaze (Optional)

  • 1 cup powdered sugar
  • 23 tbsp plant-based milk

Instructions

  1. Activate the yeast: Warm the plant-based milk to about 100-110°F. Stir in the maple syrup and active dry yeast, then let the mixture sit for 5-10 minutes until it’s frothy and bubbly, confirming the yeast is activated.
  2. Prepare the dough: In a large bowl, combine the all-purpose flour and salt. Add the yeast mixture and melted vegan butter or coconut oil. Stir to form a soft dough, then knead on a lightly floured surface for 8-10 minutes until smooth and elastic.
  3. First rise: Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm, draft-free spot for 1 to 1.5 hours, or until doubled in size.
  4. Prepare the filling: While the dough rises, finely chop the fresh strawberries. Mix them with lemon zest, maple syrup or sugar, cinnamon (if using), and optional vegan butter or coconut oil to enhance richness.
  5. Roll and fill: Once the dough has risen, roll it out into a 12×16 inch rectangle. Evenly spread the strawberry mixture over the dough, leaving a small border. Carefully roll the dough lengthwise into a tight log.
  6. Cut and second rise: Slice the log into 12 equal rolls and place them cut-side up in a greased baking dish. Cover and let rise for 30-45 minutes until puffy.
  7. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until golden brown and aromatic.
