- Prepare the ladyfinger crumbs: Crush the ladyfinger cookies into fine crumbs by placing them in a plastic bag and using a rolling pin or pulsing briefly in a food processor until sandy in texture.
- Mix mascarpone and coffee: In a bowl, gently blend the mascarpone cheese with cooled espresso and powdered sugar. Add coffee liqueur or amaretto if desired. Stir until smooth and creamy.
- Combine crumbs and creamy mixture: Gradually fold the ladyfinger crumbs into the mascarpone mixture until fully combined, forming a thick, dough-like consistency that holds shape when rolled.
- Shape into truffles: Using your hands or a small cookie scoop, roll the mixture into bite-sized balls. Place them on a parchment-lined tray and chill for 30 minutes to firm up.
- Coat and decorate: Once firm, roll the truffles in cocoa powder or dip them into melted dark chocolate for a smooth shell. Place back on the tray and refrigerate until set.
