Instructions

  1. Prepare the Meat Mixture: Sauté chopped onion and garlic in a skillet over medium heat until fragrant and translucent. Add ground beef or turkey and cook until browned. Stir in taco seasoning and mix well to fully coat the meat with flavor.
  2. Combine Ingredients: Stir in black beans, frozen corn, and salsa to the meat mixture. Cook briefly to heat through, ensuring the mixture is moist but not too liquidy for the casserole’s texture.
  3. Layer the Casserole: Grease a baking dish. Spread a layer of crushed tortilla chips or torn corn tortillas on the bottom. Evenly spread half of the meat mixture over the chips, then sprinkle with a generous handful of shredded cheddar cheese. Repeat the layers once more to complete the casserole.
  4. Bake Until Bubbling: Preheat oven to 375°F (190°C). Bake the casserole for 15-20 minutes, or until the cheese is melted, bubbly, and golden brown on top.
  5. Add Toppings and Serve: Remove from oven and let cool for a few minutes. Add optional garnishes like sour cream, sliced jalapeños, fresh cilantro, avocado slices, or lime juice before serving. Scoop and enjoy!
