Ingredients

Scale

Dough Ingredients

  • 3 ½ cups All-Purpose Flour
  • 2 ¼ teaspoons Active Dry Yeast (1 packet)
  • 1 ¼ cups Warm Water (about 110°F/43°C)
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil

Filling Ingredients

  • 4 cloves Garlic, minced or roasted
  • ½ cup Fresh Herbs (such as parsley, basil, or thyme), finely chopped
  • 1 ½ cups Shredded Cheese (mozzarella, cheddar, or blend)
  • 1 tablespoon Olive Oil or softened butter (optional, to keep filling moist)

Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-7 minutes until frothy and activated. Add the flour, salt, and olive oil, mixing until a dough forms. Knead for 8-10 minutes until soft and elastic. Cover and let rise in a warm place until doubled in size, about 1 to 1 ½ hours.
  2. Make the Garlic Herb Cheese Filling: While the dough rises, mix minced garlic, chopped fresh herbs, shredded cheese, and olive oil or softened butter in a bowl until well combined and smooth enough to spread.
  3. Roll and Spread: Punch down the risen dough and roll it out on a floured surface into a large rectangle. Spread the garlic herb cheese mixture evenly over the dough, leaving a small border around the edges to prevent filling from spilling out.
  4. Create the Swirl: Roll the dough tightly from one end to the other, sealing the edges to lock in the filling. Place the rolled dough seam-side down and carefully slice it lengthwise to expose the inner layers. Twist the two halves together, visible swirls facing up, and pinch the ends to seal.
  5. Second Rise and Bake: Transfer the twisted dough to a greased loaf pan or baking sheet. Cover and let rise another 30-40 minutes. Preheat oven to 375°F (190°C). Bake for 25-30 minutes until golden brown and cooked through. Allow to cool slightly before slicing and serving.

Notes

  • Use room-temperature ingredients to help your yeast activate properly.
  • Leave a border when spreading filling to prevent overflow during baking.
  • Brush the bread with olive oil before baking for a glossy, flavorful crust.
  • Proper kneading results in a springy, elastic dough and tender bread.
  • Cool the bread before slicing to prevent cheese from oozing out.
