Ingredients

Scale

Chicken

  • 4 chicken breasts
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, 1 tsp
  • Onion powder, 1 tsp

Creamy Spinach Artichoke Mixture

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup frozen chopped spinach, thawed and drained (or fresh spinach sautéed and drained)
  • 1 cup artichoke hearts, chopped (canned or frozen, drained)
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided

Instructions

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Season the chicken breasts evenly with salt, pepper, garlic powder, and onion powder to build a flavorful base that pairs well with the creamy topping.
  2. Combine the Creamy Mixture: In a mixing bowl, blend the softened cream cheese, sour cream or Greek yogurt, chopped spinach, chopped artichoke hearts, Italian seasoning, and half of the shredded mozzarella and Parmesan cheeses. Stir until the mixture is smooth and well combined.
  3. Assemble the Bake: Place the seasoned chicken breasts in a baking dish. Evenly spread the spinach artichoke mixture over the top of each chicken breast. Then sprinkle the remaining shredded mozzarella and Parmesan cheese on top to create a golden, melty crust.
  4. Bake to Perfection: Bake the assembled dish in the preheated oven for about 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and lightly browned. Allow the chicken to rest for a few minutes after baking to let the juices redistribute before serving.

Notes

  • Use fresh spinach if possible: Sauté and squeeze dry before mixing to improve texture.
  • Let the chicken rest after baking to keep it juicy and tender.
  • Ensure cream cheese is at room temperature for smooth mixing without lumps.
  • Check chicken doneness with a meat thermometer to ensure safety.
  • Adjust cheese amounts for your preferred gooey or crispy topping.
