Spinach Alfredo Chicken Meatballs combine tender ground chicken, fresh spinach, and creamy Alfredo sauce to deliver a comforting and wholesome dish. Perfect as a main course or appetizer, these meatballs balance rich indulgence with vibrant freshness, making them nourishing and satisfying for any occasion.

Ingredients

Scale

Meatballs

  • 1 lb ground chicken
  • 2 cups fresh spinach, washed and finely chopped
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for cooking)

Sauce

  • 1 1/2 cups Alfredo sauce (homemade or store-bought)

Instructions

  1. Prepare the Spinach: Wash and finely chop fresh spinach. Sauté it lightly in a bit of olive oil or steam it just until wilted to retain its vibrant color and nutrients.
  2. Mix the Meatball Ingredients: In a mixing bowl, combine ground chicken, sautéed spinach, Parmesan cheese, breadcrumbs, minced garlic, egg, Italian seasoning, salt, and pepper. Mix gently until all ingredients are evenly blended without overworking the meat.
  3. Shape the Meatballs: Using your hands or a small scoop, form the mixture into even, bite-sized meatballs, about one to one and a half inches in diameter; this ensures uniform cooking.
  4. Cook the Meatballs: Heat a skillet with olive oil over medium heat and brown the meatballs on all sides for about 5-7 minutes. Alternatively, bake them in a preheated oven at 375°F (190°C) for 20-25 minutes until cooked through.
  5. Simmer in Alfredo Sauce: Add the browned meatballs to a saucepan with warm Alfredo sauce and let them simmer gently for 5-10 minutes. This step infuses the meatballs with rich flavor and keeps them moist.

Notes

  • Don’t overmix the meat mixture to keep meatballs tender and avoid a tough texture.
  • Use fresh spinach for the best texture and flavor rather than frozen.
  • Use quality Alfredo sauce or make your own for the best taste.
  • Make sure all meatballs are the same size to ensure even cooking.
  • Cook a single meatball first to check seasoning and adjust if needed before cooking the rest.
