Instructions

  1. Prepare the spaghetti: Bring a large pot of salted water to a boil, then cook the spaghetti according to package instructions until al dente. Reserve a cup of pasta water before draining to help adjust sauce consistency later.

  3. Make the sun-dried tomato cream sauce: Add chopped sun-dried tomatoes directly to the skillet with spinach. Pour in heavy cream and simmer gently, stirring until the sauce thickens slightly and combines all the flavors beautifully.
  4. Combine pasta and sauce: Return the drained spaghetti to the skillet, tossing it with the cream sauce. If the sauce feels too thick, add the reserved pasta water a little at a time until the desired texture is reached.
