Ingredients

Scale

Meatballs

  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme

Mushroom Gravy

  • 8 oz button or cremini mushrooms, sliced
  • 1/4 cup finely chopped onion
  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp oil (for browning and sautéing)

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, garlic, egg, salt, pepper, and thyme. Mix gently just until combined to keep the meatballs tender. Form the mixture into uniformly sized meatballs, about two inches in diameter, ensuring even cooking.
  2. Brown the Meatballs (Optional but Recommended): Heat a skillet over medium heat with a little oil. Brown the meatballs on all sides until golden, which adds extra flavor and helps them hold their shape during slow cooking. Skip this step if short on time.
  3. Prepare the Mushroom Gravy Base: In the same skillet, sauté the sliced mushrooms and chopped onions until softened. Stir in the flour to coat the mushrooms, then gradually whisk in beef broth and Worcestershire sauce to create a thick, flavorful gravy base.
  4. Combine in the Slow Cooker: Transfer the browned meatballs to the slow cooker and pour the mushroom gravy over them. Gently stir to coat the meatballs evenly in the gravy.
  5. Slow Cook to Perfection: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. The meatballs will become tender, and the gravy will thicken beautifully, soaking into each bite.

Notes

  • Don’t overmix the meatball ingredients to keep them tender.
  • Make meatballs uniform in size for even cooking.
  • Browning meatballs adds flavor but can be skipped for convenience.
  • Thicken gravy after cooking with a cornstarch slurry if it’s too thin.
  • Use fresh mushrooms for best taste and texture.
