Instructions

  1. Prepare the base: Finely chop the onion and mince the garlic. For deeper flavor, sauté them briefly in a pan until softened and fragrant.
  2. Combine ingredients: In the slow cooker, add the chicken pieces, black and kidney beans, diced tomatoes, chopped chipotle peppers in adobo sauce, chicken broth, cumin, smoked paprika, oregano, salt, and pepper. Stir gently to combine the flavors evenly.
  3. Cook low and slow: Set the slow cooker on low and cook for 6 to 8 hours, allowing the chicken to become tender and the flavors to meld.
