Ingredients

Scale

Beef and Broth

  • 2 to 3 pounds beef chuck roast, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 cups beef broth
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste

Mushrooms and Butter

  • 12 ounces cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 3 tablespoons butter

Sauce and Thickening

  • 1/4 cup all-purpose flour
  • 3/4 cup sour cream

To Serve

  • Egg noodles or pasta, cooked according to package instructions
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Mushrooms and Garlic: Melt butter in a skillet over medium heat. Add sliced cremini mushrooms and minced garlic, sautéing until the mushrooms are golden and fragrant. Set aside the garlic butter mushrooms for later.
  2. Brown the Beef: Season the bite-sized beef chuck pieces with salt and pepper. In the same skillet, brown the beef on all sides to lock in flavor and add color.
  3. Add Ingredients to the Slow Cooker: Transfer browned beef to the slow cooker. Add chopped onions, beef broth, Dijon mustard, salt, and pepper. Stir to combine evenly.
  4. Slow Cook to Perfection: Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is tender and infused with flavorful broth.
  5. Thicken the Sauce and Add Sour Cream: About 30 minutes before serving, mix the flour with a little water to form a slurry. Stir this into the slow cooker to thicken the sauce. Then fold in the sour cream and the garlic butter mushrooms, stirring gently to combine and heat through.
  6. Serve and Enjoy: Cook egg noodles according to package instructions. Serve stroganoff generously spooned over the noodles and garnish with fresh parsley.

Notes

  • Brown your beef to add depth and complexity to the dish.
  • Use fresh mushrooms for the best flavor and texture.
  • Adjust cooking times based on your slow cooker; check tenderness after 6 hours on low heat.
  • Stir sour cream in last to prevent curdling and maintain a silky sauce.
  • Allow the stroganoff to rest for 10 minutes after cooking to let flavors meld.
