Instructions

  1. Prepare the Chicken: Slice chicken breasts thinly or pound to even thickness. Season both sides with salt and pepper. Heat olive oil or butter in a skillet over medium-high heat.

  3. Cook the Mushrooms and Garlic: Add more oil or butter if needed. Add sliced mushrooms and minced garlic to the skillet. Cook until mushrooms are browned and tender, and garlic is fragrant, about 5-6 minutes.
  4. Make the Creamy Asiago Sauce: Reduce heat to medium-low. Pour in heavy cream or half-and-half, stirring to combine with mushrooms and garlic. Simmer gently for 2-3 minutes until slightly thickened. Stir in freshly grated Asiago cheese until melted and smooth.
  5. Combine Chicken and Sauce: Return cooked chicken to the skillet. Spoon creamy Asiago mushroom sauce over the chicken. Let warm together for 1-2 minutes to meld flavors.
