Sausage Filling

  • Salt and freshly ground black pepper, to taste

Pastry & Baking

  • 1 sheet puff pastry, thawed (approx. 9x12 inches / 23x30 cm)
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Prepare the Caramelized Onions: Slice onions thinly and cook slowly in 2 tablespoons of butter over low heat, stirring occasionally, until golden brown and fragrant, about 30-40 minutes.
  2. Cook the Sausage: Remove sausage meat from casings and brown it in a hot pan, breaking it into small pieces until fully cooked and juicy.
  3. Combine Filling Ingredients: In a bowl, mix the cooked sausage, caramelized onions, chopped fresh thyme, and grated cheese. Season with salt and pepper to taste and stir to combine evenly.
  4. Assemble the Rolls: Roll out the puff pastry sheet on a lightly floured surface. Spread the prepared filling evenly along one long edge. Carefully roll the pastry over the filling and seal the edges by pressing with a fork.
  5. Prepare for Baking: Cut the rolled pastry into evenly sized pieces (about 1.5 to 2 inches wide). Place them on a lined baking tray and brush the tops with beaten egg for a glossy, golden finish.
  6. Bake to Perfection: Preheat oven to 400°F (200°C). Bake the sausage rolls for 20-25 minutes until golden brown, puffed, and cooked through. Remove from oven and allow to cool slightly before serving.
