For the Patties

  • 1 lb ground beef (80/20 for juiciness)
  • 1/3 cup bread crumbs
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Mushroom Onion Gravy

  • 2 tbsp butter
  • 1 cup sliced mushrooms
  • 1/4 cup chopped onions
  • 2 tbsp all-purpose flour (or gluten-free flour alternatives)
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional: 1 tsp fresh rosemary, thyme, or parsley (chopped)

Instructions

  1. Prepare the Beef Patties: In a large bowl, combine ground beef, bread crumbs, finely chopped onion, garlic powder, Worcestershire sauce, salt, and pepper. Mix gently until ingredients are just combined—avoid overmixing to keep the patties tender. Shape the mixture into oval patties about 1/2 inch thick and set aside.
  2. Brown the Patties: Heat a skillet over medium heat and add a splash of oil. Cook the patties for about 3-4 minutes on each side until nicely browned but not fully cooked through. Remove the patties and set them aside on a plate.
  3. Make the Mushroom Onion Gravy: In the same skillet, melt butter and sauté sliced mushrooms and chopped onions until soft and golden. Sprinkle in the flour and stir for a minute to form a roux. Slowly whisk in beef broth, allowing the mixture to thicken as it simmers. Season with salt, pepper, and optional herbs.
  4. Simmer Patties in Gravy: Return the patties to the skillet, spoon some gravy over them, cover, and simmer on low heat for 10-15 minutes until cooked through and tender, and the gravy has thickened nicely.
  5. Serve and Enjoy: Transfer Salisbury Steak and mushroom gravy to plates or bowls, spooning extra sauce on top. Serve immediately with your choice of sides such as mashed potatoes, rice, or vegetables.
