Ingredients

Scale

Protein

  • 4 bone-in, skin-on chicken thighs

Vegetables

  • 1.5 pounds baby potatoes, halved or quartered depending on size

Garlic Parmesan Glaze

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh rosemary or thyme, chopped

Others

  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the Chicken and Potatoes: Pat the chicken thighs dry with paper towels to ensure crispy skin. Halve or quarter baby potatoes for even cooking. Generously season both chicken and potatoes with salt and pepper.
  2. Make the Garlic Parmesan Glaze: In a small saucepan or microwave-safe bowl, melt butter and mix in minced garlic, letting it infuse gently without browning. Stir in grated Parmesan cheese, lemon juice, and chopped fresh herbs until smooth and thick.
  3. Combine and Roast: Arrange chicken and potatoes in a single layer on a large baking sheet or roasting pan. Drizzle the garlic Parmesan glaze evenly over all, making sure chicken skin and potatoes are well coated. Roast in a preheated oven at 400°F (200°C) for 35 to 40 minutes until chicken is cooked through and potatoes are tender and golden.
  4. Broil for Extra Crispiness (Optional): During the last 3 to 5 minutes, switch oven to broil to crisp the chicken skin and caramelize potatoes, watching carefully to prevent burning.
  5. Rest and Serve: Remove from the oven and let rest for 5 minutes to allow juices to redistribute. Serve hot, garnished with fresh herbs or extra Parmesan if desired.

Notes

  • Ensure chicken skin is completely dry before roasting for a crispy texture.
  • Cut potatoes uniformly to ensure even roasting.
  • Use freshly grated Parmesan for better melting and flavor.
  • Monitor oven temperature to avoid burning while achieving crispiness.
  • Let dish rest after cooking for juicy, tender chicken.
