Roasted Tomato Caprese Salad

Roasted Tomato Caprese Salad

Roasted Tomato Caprese Salad is a fresh, flavorful, and elegant twist on the classic Caprese. Roasting intensifies the sweetness and umami of tomatoes, complementing creamy mozzarella and fragrant basil for a delightfully balanced salad perfect as a light lunch, sophisticated side, or healthy snack any time of year.

Ingredients

Fresh Ingredients

  • Ripe, juicy tomatoes (enough for 20-25 minutes roasting)
  • Fresh mozzarella, sliced thickly
  • Fresh basil leaves

Seasonings & Oils

  • Extra virgin olive oil, for drizzling and roasting
  • Balsamic reduction or balsamic vinegar
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Prepare the Tomatoes: Preheat your oven to 400°F (200°C). Slice ripe tomatoes into thick rounds or wedges and place them on a baking sheet. Drizzle with olive oil and season lightly with salt and pepper. Roast for 20 to 25 minutes, until the edges caramelize and the flavors concentrate.
  2. Slice the Mozzarella: While the tomatoes roast, slice fresh mozzarella into thick, even pieces. Uniform slices help balance each bite with the roasted tomatoes.
  3. Assemble the Salad: On a serving plate, alternately layer the roasted tomato pieces with mozzarella slices and fresh basil leaves, creating a colorful and visually appealing pattern.
  4. Drizzle and Season: Finish the salad with a generous drizzle of extra virgin olive oil and balsamic reduction or vinegar. Sprinkle with freshly cracked black pepper and flaky sea salt for enhanced flavor depth.
  5. Serve Immediately: Serve the Roasted Tomato Caprese Salad fresh at room temperature to enjoy the warm roasted tomatoes balanced by the cool mozzarella and fresh basil.

Notes

  • Choose ripe, in-season tomatoes for the best flavor and sweetness.
  • Do not overcrowd the roasting pan to ensure tomatoes caramelize instead of steaming.
  • Add fresh basil leaves right before serving to keep them vibrant and prevent wilting.
  • Make your own balsamic reduction by simmering balsamic vinegar until thickened for richer sweetness.
  • Let the salad rest at room temperature for 10 minutes after assembly to meld flavors.
  • Store leftover roasted tomatoes separately from mozzarella and basil to maintain freshness.
  • Freezing is not recommended as mozzarella and basil do not freeze well.
  • If reheating, gently warm only the roasted tomatoes before assembling the salad.
