Ingredients

Scale

Main Ingredients

  • 45 fresh beets (medium-sized)
  • 8 oz burrata cheese
  • 4 cups arugula or mixed greens
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic vinegar or balsamic glaze
  • 2 tablespoons fresh herbs (such as basil or thyme), chopped
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Optional Ingredients

  • 1/4 cup toasted nuts (walnuts or pistachios)
  • Orange segments or lemon juice (for citrus variation)
  • Cooked quinoa or farro (for adding grains)

Instructions

  1. Prepare the Beets: Wash and trim the beets. Roast them whole or cut into chunks, wrapped in foil or placed in a covered baking dish, at 400°F (200°C) for 45 to 60 minutes until tender.
  2. Cool and Peel: Let the roasted beets cool. Once cool, rub the skin off using your hands or a paper towel until the glossy, colorful flesh is revealed.
  3. Arrange the Greens: Lay a bed of fresh arugula or mixed greens on a large platter or individual plates to create the fresh salad base.
  4. Assemble the Salad: Slice or chunk the roasted beets over the greens. Gently tear and place pieces of burrata cheese on top, allowing its creamy center to spill slightly over the beets and greens.
  5. Dress and Garnish: Drizzle extra virgin olive oil and balsamic glaze or vinegar evenly over the salad. Sprinkle with sea salt, freshly ground black pepper, fresh chopped herbs, and toasted nuts if using. Serve immediately for best freshness and flavor.

Notes

  • Roast beets of similar size for even cooking.
  • Add burrata cheese just before serving to keep it fresh and creamy.
  • Use high-quality extra virgin olive oil and fresh burrata cheese for best flavor.
  • Consider wearing gloves when handling beets to avoid staining.
  • Allow the salad to rest for a few minutes after dressing to let flavors meld.
