Instructions

  1. Prepare the crust: Combine the all-purpose flour, granulated sugar, and baking powder in a bowl. Cut in cold butter pieces until the mixture resembles coarse crumbs. Press this mixture evenly into a greased baking dish to form the crust, then bake at 350°F (175°C) for about 15–18 minutes or until lightly golden and set.
  2. Mix the lemon filling: In a separate bowl, whisk together the eggs, granulated sugar, sour cream, fresh lemon juice, and lemon zest until smooth and creamy, forming a custard-like mixture.
  3. Add raspberries and pour filling: Gently scatter fresh raspberries evenly over the baked crust. Pour the lemon filling over the raspberries, ensuring they are partially covered and evenly distributed.
  4. Bake until set: Return the tart bars to the oven and bake at 350°F (175°C) for 25–30 minutes, or until the lemon filling is firm and slightly golden around the edges. Remove from oven and let cool completely in the pan.
