Raspberry Ganache

Raspberry Ganache is a luscious and vibrant twist on traditional ganache, combining rich chocolate with the bright, tangy flavor of fresh raspberries. This versatile, silky ganache is perfect for cakes, tarts, truffles, or as a dip, bringing an elegant burst of color and fruity flavor to any dessert occasion.

Ingredients

Scale

Core Ingredients

  • 200g high-quality dark or white chocolate, chopped
  • 150g fresh or frozen raspberries
  • 150ml heavy cream
  • 30g unsalted butter
  • Optional: 1-2 tbsp powdered sugar (to taste)
  • Optional: 1 tsp lemon juice

Variation Suggestions

  • Dairy-free option: substitute 150ml coconut cream and use vegan chocolate
  • For adult version: add 1 tbsp raspberry liqueur (e.g., Chambord or raspberry schnapps)
  • Mint variation: finely chopped fresh mint leaves to taste

Instructions

  1. Prepare the raspberries: Gently warm your fresh or thawed frozen raspberries in a saucepan until they release their juice, then strain the mixture through a fine sieve to separate the seeds from the smooth raspberry puree.
  2. Heat the cream and butter: In a small pot, heat the heavy cream and unsalted butter over medium heat just until it starts to simmer, avoiding a full boil to maintain a silky texture.
  3. Combine the chocolate and raspberry puree: Place the chopped chocolate in a heatproof bowl; pour the hot cream and butter mixture over it, then add the raspberry puree. Let it sit for a minute to soften the chocolate before gently stirring until a smooth, glossy ganache forms.
  4. Adjust sweetness and flavor: Taste your ganache and add powdered sugar or lemon juice if desired, stirring until everything is fully incorporated and perfectly balanced.
  5. Cool and use or store: Allow your Raspberry Ganache to cool at room temperature or refrigerate it if you want a thicker consistency before using it as a frosting, filling, or dip.

Notes

  • Choose quality chocolate with at least 60% cocoa for dark ganache for best flavor.
  • Strain raspberry seeds well for a silky smooth texture without crunch.
  • Use ingredients at room temperature to ensure smooth mixing and a flawless ganache.
  • Avoid overheating the cream to prevent burning and flavor alteration.
  • Adjust thickness by refrigerating to thicken or gently warming for a thinner consistency.
