Quick & Savory Stir-Fried Chicken with Crispy Cabbage is a flavorful, easy-to-make dish combining tender chicken and crunchy cabbage in a savory sauce. Ready in under 30 minutes, it’s perfect for busy weeknights and uses simple everyday ingredients to deliver a healthy, comforting meal with a balanced flavor profile.

Ingredients

Protein

  • Boneless chicken breasts or thighs, thinly sliced – about 1 lb (450g)

Vegetables

  • Green cabbage, sliced or shredded – about 4 cups
  • Green onions, thinly sliced – 2 stalks
  • Optional veggies: bell peppers, mushrooms, snap peas (amount as desired)

Sauce & Seasoning

  • Soy sauce – 3 tbsp
  • Minced garlic – 2 cloves
  • Grated fresh ginger – 1 tbsp
  • Sesame oil – 1 tsp
  • Vegetable or canola oil – 2 tbsp
  • Optional red chili flakes – ¼ to ½ tsp or to taste
  • Optional honey or maple syrup – 1 tsp (for a sweet touch)

Garnish

  • Sesame seeds – 1 tsp (optional)

Instructions

  1. Prepare and Slice Ingredients: Trim the chicken breasts or thighs and slice them into thin strips for even and quick cooking. Rinse the green cabbage and cut it into bite-sized pieces or thin shreds to achieve a crispy texture.
  2. Marinate the Chicken: In a bowl, combine soy sauce, minced garlic, grated ginger, and a splash (about 1 tsp) of sesame oil. Toss the chicken strips in this mixture and let them marinate for at least 10 minutes to absorb the flavors.
  3. Heat the Pan and Stir-Fry Chicken: Warm vegetable or canola oil in a large wok or skillet over medium-high heat. Add the marinated chicken in a single layer and stir-fry until cooked through and lightly golden, about 4 to 5 minutes.
  4. Add the Cabbage: Push the chicken to one side of the pan, then add the sliced cabbage. Continue stir-frying, tossing frequently to keep the cabbage tender-crisp and crunchy, for approximately 3 to 4 minutes.
  5. Combine and Finish the Dish: Mix the chicken and cabbage together in the pan. If desired, add extra soy sauce or sesame oil to taste. Sprinkle optional red chili flakes for heat and drizzle honey or maple syrup if using. Toss everything once more to evenly combine flavors.
  6. Garnish and Serve: Remove from heat and garnish with thinly sliced green onions and optional sesame seeds. Serve hot with steamed jasmine rice, cauliflower rice, noodles, or in lettuce wraps for variety.

Notes

  • Use high heat to achieve a good sear on the chicken and keep cabbage crispy.
  • Do not overcrowd the pan to avoid steaming the chicken; cook in batches if necessary.
  • Prep and measure all ingredients before starting to stir-fry, as cooking is quick.
  • Thin slicing chicken and cabbage speeds up cooking and enhances mouthfeel.
  • Adjust the sauce quantities for saltiness or sweetness according to personal preference.
  • To make it vegetarian, substitute chicken with firm tofu or tempeh and add extra vegetables.
  • For gluten-free, use tamari or coconut aminos instead of soy sauce.
  • Reheat gently in a skillet to preserve texture; avoid microwaving for long periods.
