  • 1 cup strong espresso or coffee, cooled
  • 2024 ladyfingers

  • 3/4 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves

Instructions

  1. Prepare the Pumpkin Mascarpone Mixture: In a large bowl, combine mascarpone cheese, pumpkin puree, sugar, vanilla extract, ground cinnamon, nutmeg, and cloves. Beat until the mixture is smooth and creamy. Gently fold in whipped cream until light and fluffy, creating the filling.
  2. Brew and Sweeten Coffee: Brew strong espresso or coffee. Sweeten with sugar or an optional flavoring such as spiced rum or vanilla syrup. Allow to cool slightly before proceeding.
  3. Assemble the Layers: Quickly dip each ladyfinger into the coffee mixture so they soak lightly but do not become soggy. Arrange a layer of soaked ladyfingers in your serving dish or individual glasses. Spread a generous layer of the pumpkin mascarpone mixture over the ladyfingers evenly.
  4. Repeat and Chill: Continue layering soaked ladyfingers and pumpkin mascarpone mixture until all ingredients are used, finishing with a mascarpone layer. Smooth the top, cover with plastic wrap, and refrigerate for at least 4 hours or preferably overnight to let flavors meld and set.
  5. Garnish and Serve: Before serving, dust the top with cinnamon, pumpkin pie spice, or sprinkle with chopped toasted nuts or chocolate shavings. Optionally, add dollops of fresh whipped cream for a classic finish.

Notes

  • Use chilled mascarpone for easier mixing and a creamier texture.
  • Do not oversoak the ladyfingers to prevent sogginess and help layers stay intact.
  • Rest the tiramisu overnight to enhance flavor melding and soften the ladyfingers.
  • Use fresh or high-quality canned pure pumpkin puree for best flavor and texture.
