Instructions

  1. Prepare and Sear the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat, then sear the chicken for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken and set aside to rest.
  2. Sauté Garlic and Sun-Dried Tomatoes: In the same pan, add more olive oil if needed. Add minced garlic and chopped sun-dried tomatoes, sautéing for 1-2 minutes until fragrant, taking care not to burn the garlic.
  3. Create the Creamy Parmesan Sauce: Pour in chicken broth and deglaze the pan by scraping up any browned bits. Lower the heat, then stir in heavy cream and grated Parmesan cheese. Simmer gently until the sauce thickens and becomes silky smooth.
  4. Add Spinach and Return Chicken: Stir in fresh spinach leaves and allow them to wilt into the sauce. Return the seared chicken breasts to the skillet, spooning sauce over them. Let everything warm together for a couple of minutes to meld the flavors.
