Instructions

  1. Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets. Pat dry thoroughly with a clean towel to ensure a crisp roast rather than steaming.
  2. Make the Moroccan Spice Blend: In a small bowl, combine ground cumin, smoked paprika, ground coriander, ground cinnamon, salt, and pepper. Mix well to create the warm Moroccan spice blend.
  3. Roast the Cauliflower: Toss the cauliflower florets with olive oil, minced garlic, and the Moroccan spice blend until evenly coated. Spread the florets in a single layer on a baking sheet lined with parchment paper for easy cleanup. Roast in a preheated oven at 425°F (220°C) for 25–30 minutes, or until golden brown and tender, stirring halfway through for even cooking.
  4. Prepare the Tahini-Honey Sauce: While the cauliflower roasts, whisk together tahini, honey, lemon juice, a pinch of salt, and warm water a little at a time until the sauce is smooth, creamy, and pourable. Adjust the consistency as desired.
  5. Assemble and Serve: Once the cauliflower is roasted, transfer it to a serving dish. Drizzle generously with the tahini-honey sauce and sprinkle chopped fresh parsley or cilantro on top. Serve immediately to enjoy the best flavor and texture.
