Ingredients

Scale

Base Ingredients

  • 4 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup shredded cheese (cheddar, feta, or mozzarella)

Vegetables

  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 cup diced mushrooms
  • 1/4 cup diced tomatoes

Protein Add-ins (Optional)

  • 1/4 cup diced ham, bacon, or cooked sausage

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs like parsley or chives, chopped (about 1 tbsp)
  • Optional: red pepper flakes for a spicy kick

Instructions

  1. Preheat and Prepare Your Muffin Tin: Start by preheating your oven to 375°F (190°C). Grease a mini muffin tin with oil, butter, or non-stick spray to ensure easy removal of the muffins.
  2. Whisk Together the Eggs and Dairy: In a mixing bowl, crack your eggs and add the milk or cream. Whisk until the mixture is smooth and slightly frothy to ensure light and fluffy muffins.
  3. Add Cheese, Vegetables, and Protein: Stir in the shredded cheese along with the finely diced vegetables and cooked protein, making sure all ingredients are chopped finely for compact bite-sized muffins.
  4. Season Generously: Sprinkle salt, pepper, and your choice of fresh herbs and spices into the mixture. Mix well to distribute flavor evenly.
  5. Fill the Muffin Tin and Bake: Pour the egg mixture evenly into each muffin cup, filling just below the rim to allow for rising. Bake for 15 to 18 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  6. Cool and Enjoy: Let the Mini Frittata Muffins cool for a few minutes before removing them from the tin to prevent sticking. Serve warm or pack for a quick breakfast on the go.

Notes

  • Use room temperature eggs and dairy for better mixing and texture.
  • Do not overfill muffin cups to avoid spillover during baking.
  • Pre-cook vegetables and meats to remove excess moisture and intensify flavors.
  • Silicone muffin molds make removing muffins easier and cleanup faster.
  • Make a batch ahead and freeze for up to 2 months; thaw and reheat before serving.
