  • 4 boneless, skinless chicken breasts

  • Olive oil, for sautéing and drizzling (about 2-3 tablespoons)

Filling

  • 2 cups fresh spinach, chopped
  • 1/3 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 2 cloves fresh garlic, minced
  • 1 teaspoon dried oregano (or 1 tablespoon fresh)
  • 1 teaspoon dried basil (or 1 tablespoon fresh)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Add the minced garlic, chopped sun-dried tomatoes, sliced Kalamata olives, and fresh spinach. Cook until the spinach wilts and the mixture is fragrant. Remove from heat and stir in the crumbled feta cheese, oregano, basil, and lemon juice. Season the filling with salt and pepper to taste.
  2. Butterfly the Chicken Breasts: Place each chicken breast on a cutting board. With a sharp knife, carefully slice horizontally through the chicken breast, stopping before cutting all the way through to create a pocket. Lightly season both the inside and outside of each chicken breast with salt and pepper.
  3. Stuff the Chicken: Spoon the prepared filling evenly into each chicken pocket. Use toothpicks if necessary to secure the opening and hold the stuffing inside while cooking.
  4. Cook the Chicken: Preheat an oven-safe skillet over medium-high heat and add olive oil. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the chicken is fully cooked and juicy.
  5. Rest and Serve: Remove chicken from the oven and let it rest for 5 minutes to allow juices to redistribute. Serve garnished with fresh herbs or extra lemon zest if desired.
