Ingredients

Scale

Filling Ingredients

  • 2 cups fresh spinach, washed and chopped
  • 1/2 cup feta cheese, crumbled
  • 1 small onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill or parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Pastry Ingredients

  • 2 sheets puff pastry, thawed but chilled
  • Olive oil or beaten egg, for brushing

Instructions

  1. Prepare the Filling: Wash and chop the fresh spinach leaves. Heat olive oil in a pan and sauté the minced onions and garlic until translucent and fragrant. Add the spinach and cook until wilted. Remove from heat and let cool slightly, then stir in crumbled feta cheese and fresh herbs. Season with salt and pepper to taste.
  2. Roll Out the Puff Pastry: Unfold the puff pastry sheets onto a lightly floured surface. Roll them out gently to slightly enlarge their size and ensure even thickness for a crisp, golden crust when baked.
  3. Assemble the Pastries: Cut the pastry sheets into equal squares or rectangles. Spoon a generous amount of the spinach and cheese filling onto one half of each piece, leaving the edges free. Fold over the pastry to create pockets and press the edges firmly with a fork to seal the filling inside.
  4. Bake Until Golden: Place the assembled pastries on a baking sheet lined with parchment paper. Brush the tops with olive oil or beaten egg for a shiny finish. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until puffed and golden brown.
  5. Cool and Serve: Remove from oven and allow the pastries to rest a few minutes to set the filling and avoid burns. Serve warm or at room temperature and enjoy the vibrant Mediterranean flavors.

Notes

  • Drain spinach well to remove excess moisture and prevent soggy pastry.
  • Keep the puff pastry cold until baking to achieve maximum flakiness.
  • Do not overfill the pastries to avoid bursting during baking.
  • Seal edges securely using a fork to prevent leaks.
  • Brush with olive oil or egg wash before baking for a golden, shiny finish.
