Ingredients

Scale

For the Meatballs

  • 500g ground beef or a blend of beef and pork
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

For the Creamy Sauce

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 cup heavy cream or sour cream
  • 1/4 cup beef broth or water
  • Salt and pepper, to taste
  • Fresh herbs such as parsley or dill (optional)

For the Mashed Potatoes

  • 1 kg peeled potatoes (preferably Russets)
  • 3 tablespoons butter
  • 1/2 cup warm milk
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatballs: Mix ground meat with breadcrumbs, finely chopped onion, minced garlic, salt, and pepper. Gently form the mixture into small, even-sized meatballs, ensuring they hold together yet remain tender.
  2. Brown the Meatballs: Heat oil in a skillet over medium heat and brown the meatballs on all sides, locking in flavor and creating a crust before cooking them in the sauce.
  3. Make the Creamy Sauce: Using the same pan, add butter and sauté finely chopped onions until translucent. Pour in heavy cream or sour cream and add beef broth or water to thin the sauce slightly. Season with salt, pepper, and optional herbs, then gently stir.
  4. Simmer Meatballs in Sauce: Return the browned meatballs to the pan, spoon sauce over them, cover, and simmer on low heat for 15-20 minutes so flavors meld and meatballs cook through.
  5. Prepare Mashed Potatoes: Boil peeled potatoes until tender, drain, and mash with butter, warm milk, salt, and pepper to your desired creaminess. For extra smooth potatoes, use a ricer.
  6. Plate and Serve: Serve meatballs and creamy sauce over a bed of fluffy mashed potatoes. Garnish with fresh herbs for a bright finishing touch.

Notes

  • Don’t overmix the meatball mixture to keep them tender.
  • Make meatballs uniform in size for even cooking.
  • Use warm milk when mashing potatoes for creamier results.
  • Simmer sauce uncovered at the end to thicken if needed.
  • Let meatballs rest after cooking to redistribute juices.
