Ingredients

Scale

Chicken Wings

  • 2 lbs chicken wings, fresh or thawed, skin on for best crispiness

Mango Chili Sauce

  • 1 cup fresh ripe mango chunks
  • 23 tablespoons chili peppers (jalapeños, serranos) or chili sauce (adjust to taste)
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 12 tablespoons honey or brown sugar
  • 1 tablespoon soy sauce or tamari (for gluten-free option)

Cooking and Seasoning

  • 1 tablespoon olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Wings: Rinse the chicken wings and pat them dry thoroughly with paper towels to ensure crispiness. Trim any excess skin or wing tips if desired.
  2. Make the Mango Chili Sauce: In a blender or food processor, combine fresh mango chunks, chili peppers or chili sauce, minced garlic, lime juice, honey, and soy sauce. Blend until smooth and vibrant, balancing sweet and spicy flavors.
  3. Marinate the Wings: Place the wings in a large bowl or resealable bag, pour half of the mango chili sauce over them, and toss to coat evenly. Let them marinate for at least 30 minutes or up to a few hours in the refrigerator for deeper flavor.
  4. Cook the Wings: Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper. Arrange the wings on the sheet with space between each piece to allow air circulation. Bake for 25-30 minutes, flipping halfway through, until the skin is crispy and golden brown.
  5. Glaze and Final Bake: Brush the wings generously with the remaining mango chili sauce. Return to the oven for an additional 5-7 minutes to lock in moisture and create a sticky, flavorful glaze.

Notes

  • Pat wings completely dry before cooking to ensure crispiness.
  • Adjust chili amount gradually to control spice level without sacrificing flavor.
  • Use fresh ripe mango for the best natural sweetness.
  • Do not overcrowd the baking sheet; allow space for air flow to crisp the skin.
  • Double the sauce if you want extra for dipping or glazing.
