Potatoes and Garlic

  • 1.5 lbs baby Yukon Gold potatoes
  • 1 whole head garlic
  • 2 tbsp olive oil (divided)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Bacon and Cheese

  • 68 strips bacon
  • 1 cup shredded cheddar cheese

Toppings

  • 3 green onions, sliced
  • 1/2 cup sour cream

Instructions

  1. Roast the Potatoes: Preheat your oven to 425°F (220°C). Toss the baby Yukon Gold potatoes whole or halved in 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes until golden and tender inside with a crispy exterior.
  2. Roast the Garlic: While the potatoes roast, prepare the garlic. Slice the top off a whole head of garlic, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven alongside the potatoes for about 35-40 minutes. The garlic will turn soft, golden, and sweet.
  3. Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels to remove excess grease, then chop into bite-sized pieces.
  4. Assemble the Potatoes: Once potatoes are done, gently mash some of them with the soft, roasted garlic to infuse flavor. Top the potatoes with chopped bacon, shredded cheddar cheese, and sliced green onions.
  5. Melt Cheese and Garnish: Place the assembled potatoes back in the oven for 5-7 minutes until the cheese melts beautifully. Finish with dollops of sour cream and additional green onions for a fresh, creamy topping.
