  • 1/4 cup water

  • 68 flour or corn tortillas (warmed to soften)
  • 1 cup refried beans
  • 1 cup salsa or diced tomatoes
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Sliced olives
  • Jalapeños
  • Green onions
  • Chopped cilantro
  • Sliced avocado
  • Lime wedges

Instructions

  1. Prepare the Meat: Cook the ground beef or turkey in a skillet over medium heat until browned. Drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for a few minutes until fragrant and well combined.
  2. Soften the Tortillas: Warm the tortillas slightly in the microwave or on a skillet to make them pliable, preventing breakage during layering.
  3. Layer the Ingredients: Grease a baking dish and start with a layer of tortillas. Spread refried beans over the tortillas, followed by a layer of seasoned meat. Spoon salsa or diced tomatoes on top, then sprinkle shredded cheese. Repeat these layers until all ingredients are used, finishing with cheese on top.
  4. Bake to Perfection: Preheat oven to 375°F (190°C). Cover the dish with foil and bake for 20 minutes. Remove foil and continue baking for another 10 minutes until the cheese is bubbly and golden.
  5. Add Toppings and Serve: Let the bake cool slightly once out of the oven. Add desired fresh toppings such as sour cream, olives, jalapeños, and green onions. Slice and serve warm.
