Cheese & Herbs (for serving)

  • 1 cup cottage cheese or ricotta
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, torn

Instructions

  1. Brown the Meat and Aromatics: Heat a large pot over medium heat. Add the ground beef or sausage, breaking it apart as it cooks until well browned. Add diced onions and minced garlic, sautéing until fragrant and translucent to build a flavorful base.
  2. Add Tomatoes and Broth: Pour in crushed tomatoes and broth, stirring to combine. Sprinkle in Italian seasoning, salt, and pepper. Bring the mixture to a simmer to meld the flavors.
  3. Cook the Pasta: Add broken lasagna noodles or your preferred pasta shape directly to the pot. Cook until the pasta is just tender, stirring occasionally to prevent sticking and ensure even cooking.
  4. Serve with Cheese and Herbs: Ladle the hot soup into bowls. Add a generous spoonful of cottage cheese or ricotta, sprinkle with shredded mozzarella, and finish with torn fresh basil leaves for a vibrant, cheesy touch.
