Ingredients

Scale

Main Ingredients

  • 4 large egg whites (room temperature)
  • 1 cup granulated sugar
  • 2 tablespoons Jello powder (any flavor)
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Prepare Your Ingredients and Equipment: Make sure your mixing bowl and beaters are completely clean and dry to help the egg whites whip properly. Carefully separate the egg whites from yolks, ensuring no yolk is included, as this can prevent achieving stiff peaks.
  2. Whip the Egg Whites: Beat the egg whites on medium speed until frothy. Add the cream of tartar to stabilize the meringue. Gradually add the granulated sugar while increasing the speed to high. Continue beating until stiff, glossy peaks form.
  3. Incorporate Jello Powder: Gently fold in the chosen Jello powder using a spatula to avoid deflating the meringue. This step adds vibrant flavor and color.
  4. Pipe or Spoon Onto Baking Sheet: Using a piping bag or two spoons, form small mounds or shapes onto a parchment-lined baking sheet, leaving space between each for even baking.
  5. Bake at Low Temperature: Bake the meringues in a preheated oven at 225°F (110°C) for 1.5 to 2 hours. This slow baking dries the cookies without browning. Turn off the oven and allow cookies to cool inside to achieve perfect crispiness.

Notes

  • Use room temperature eggs for better volume and easier whipping.
  • Add sugar gradually to create a glossy, stable meringue.
  • Fold in Jello powder gently to maintain airiness.
  • Bake the meringues low and slow to dry thoroughly without cracking.
  • Store cookies in an airtight container at room temperature to keep them crisp for up to a week.
  • Freeze in a sealed container for up to a month; thaw at room temperature before serving.
  • Reheat gently in a low oven for 5-10 minutes if cookies soften to restore crispness.
