Phyllo Dough Layer
- 8–10 sheets phyllo dough
- 1 cup unsalted butter, melted
Nut Mixture
- 1 cup mixed nuts (walnuts, pistachios, almonds), finely chopped
- 1 tsp ground cinnamon
- 1 tbsp granulated sugar
Cheesecake Filling
- 16 oz (450g) cream cheese, room temperature
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
Finishing
- 1/2 to 3/4 cup honey, warmed for drizzling
- Prepare the Nut Mixture: Finely chop the walnuts, pistachios, and almonds. Mix them with cinnamon and sugar in a bowl. Set aside to use in layers.
- Layer and Butter the Phyllo Dough: Preheat oven to 325°F (165°C). Brush a springform pan with melted butter. Place one sheet of phyllo dough in the pan, brush with butter, and repeat layering 4-5 sheets, brushing each with butter. Keep remaining phyllo covered with a damp towel to prevent drying.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese with sugar until smooth. Add sour cream, eggs one at a time, vanilla extract, and nutmeg. Mix thoroughly to create a creamy, lump-free filling.
- Assemble the Layers: Spread half the cheesecake filling evenly over the layered phyllo base. Sprinkle half the nut mixture over the filling. Add the remaining cheesecake filling on top, then sprinkle the remaining nuts. Layer the remaining phyllo sheets (3-4) on top, brushing each with melted butter.
- Bake and Drizzle with Honey: Bake in the preheated oven for about 50 minutes until the top is golden brown and the cheesecake filling is set. Remove from oven and immediately drizzle generously with warm honey. Allow to cool completely before slicing.
