Instructions

  1. Step 1: Prepare the Chicken and Vegetables. Cook the chicken breast fully by poaching or pan-cooking, then shred it finely. Julienne fresh carrots, shred cabbage, and finely chop green onions. Combine the shredded chicken and vegetables in a large bowl.
  2. Step 2: Season the Filling. Add minced garlic, grated ginger, soy sauce, and sesame oil to the chicken and vegetable mixture. Stir well to evenly distribute all the flavors.
  3. Step 3: Wrap the Spring Rolls. Lay a spring roll wrapper flat on a clean surface. Place about two tablespoons of the filling near one corner. Fold the corner over the filling tightly, then fold the sides inward and roll it up completely. Brush the edge with beaten egg to seal the roll firmly to prevent it from opening during frying.
  4. Step 4: Fry Until Golden and Crispy. Heat vegetable oil in a deep frying pan until about 350°F (175°C). Carefully add the wrapped rolls into the hot oil and fry them in batches. Turn occasionally until all sides are golden brown and crispy, about 3-4 minutes per batch.
  5. Step 5: Drain and Serve. Remove the fried spring rolls with a slotted spoon and place them on paper towels to remove excess oil. Serve warm with your choice of dipping sauces.
