Puff Pastry

Mushroom Filling

  • 8 oz (225 g) button mushrooms, cleaned and finely chopped
  • 1 small onion or 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil or butter (for sautéing)
  • Salt and pepper, to taste

Cheese

  • 1 cup (about 100 g) Gruyère cheese, grated

Finishing

  • 1 beaten egg (for egg wash)

Instructions

  1. Prepare the Mushroom Filling: Heat olive oil or butter in a skillet over medium heat. Add finely chopped onions and minced garlic and cook until soft and fragrant. Add the chopped mushrooms and sauté until the moisture evaporates and they turn golden brown. Stir in chopped fresh thyme and parsley, then season with salt and pepper. Remove from heat and let cool slightly.
  2. Roll Out the Puff Pastry: Place the puff pastry sheet on a lightly floured surface. Gently roll it out a little to smooth any folds, then cut into a rectangle approximately 12 inches by 8 inches. Leave a wider middle section for the filling and cut evenly spaced slits on both sides to create strips for the plait.
  3. Assemble the Plait: Spread the cooled mushroom mixture evenly down the center of the pastry rectangle. Sprinkle the grated Gruyère cheese over the mushroom filling. Starting at the top, fold strips of pastry alternately from each side over the filling, overlapping the strips to form a braided plait pattern, securing the filling inside.
  4. Egg Wash and Bake: Brush the entire plait with the beaten egg to achieve a glossy, golden crust. Transfer onto a parchment-lined baking tray. Bake in a preheated oven at 400°F (200°C) for 25 to 30 minutes, or until the pastry is puffed and golden brown.
