Instructions

  1. Prepare the Eggplant Slices: Wash and slice the eggplants lengthwise into thin slices about 1/4 inch thick. Lightly salt the slices and let them sit for 20 minutes to draw out moisture and reduce bitterness, then pat dry with paper towels to ensure even cooking and prevent sogginess.
  2. Cook the Eggplant: Heat olive oil in a large skillet over medium heat. Cook the eggplant slices in batches for 2-3 minutes per side until golden brown and soft. Remove and place on paper towels to absorb excess oil.
  3. Prepare the Filling: In a mixing bowl, combine ricotta cheese with chopped fresh basil, minced garlic, optional spinach, salt, pepper, and grated Parmesan. Mix until smooth and creamy. Taste and adjust seasoning as needed.
  4. Roll the Eggplant: Lay each eggplant slice flat and spoon a generous amount of the cheese mixture onto one end. Gently roll it up and place seam-side down in a baking dish lightly spread with tomato sauce. Repeat with all slices to fill the dish.
  5. Add Sauce and Bake: Pour the remaining tomato sauce evenly over the rolls, sprinkle extra Parmesan cheese on top, and bake uncovered at 375°F (190°C) for 25-30 minutes until bubbly and golden on top.
