  • 1/3 cup pineapple juice (from fresh or canned pineapple)

  • 2 green onions, sliced

Instructions

  1. Prepare the Marinade: In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and pineapple juice until the sugar dissolves and the mixture is well blended.
  2. Marinate the Chicken: Place the chicken in a shallow dish or large resealable bag and pour the marinade over it. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator for deeper flavor.
  3. Cook the Chicken: Heat a skillet or grill to medium-high heat. Remove chicken from marinade (reserving the marinade) and cook the chicken for 5-7 minutes per side, until golden brown and cooked through.
  4. Make the Glaze: While the chicken cooks, pour the reserved marinade into a small saucepan. Bring it to a boil, then simmer until slightly thickened into a glaze.
  5. Combine and Garnish: Brush the chicken with the glaze just before finishing cooking, then top with pineapple chunks and sliced green onions. Serve immediately.
