Instructions

  1. Boil and Prepare the Eggs: Place your eggs in a pot and cover with water. Bring to a boil, then turn off the heat and cover the pot. Let the eggs sit for 10-12 minutes. Cool them in an ice bath, then peel carefully to keep the whites smooth.
  2. Color the Egg Whites: Soak peeled eggs in a bowl with water mixed with your chosen food coloring—black, green, or red—for at least one hour to create spooky colored whites.
  3. Prepare the Filling: Slice eggs in half lengthwise and gently scoop out the yolks into a mixing bowl. Mash the yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth and creamy.
  4. Fill the Egg Whites: Using a piping bag or spoon, carefully fill each colored egg white half with the creamy yolk mixture, shaping the filling neatly for a polished look.
