Instructions

  1. Prepare the Potatoes: Preheat oven to 425°F (220°C). Toss baby potatoes with olive oil, minced garlic, salt, and pepper. Spread in a single layer on a baking sheet and roast for 25-30 minutes, turning halfway, until golden and crispy.
  2. Cook the Rice: While potatoes roast, rinse rice and cook according to package instructions until fluffy.
  3. Grill the Chicken: Preheat grill or grill pan. Brush chicken breasts with olive oil and season with salt and pepper. Grill for 6-7 minutes per side until fully cooked with grill marks. Let rest for a few minutes.
  4. Make the Creamy Sauce: In a skillet, melt butter over medium heat. Sauté minced garlic until fragrant. Pour in heavy cream and simmer gently, stirring occasionally. Season with salt, pepper, and fresh herbs. Reduce until slightly thickened.
