For the Bowls:

  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, sliced
  • 1/2 red onion, thinly sliced
  • Optional garnishes: chopped parsley, extra dill, mint leaves, crumbled feta cheese, kalamata olives

Instructions

  1. Prepare the chicken marinade: In a bowl, combine olive oil, lemon juice, minced garlic, chopped fresh dill, salt, and pepper. Add the chicken breasts or thighs and toss well to coat. Let the chicken marinate for at least 20 minutes to soak up the vibrant Mediterranean flavors.
  2. Cook the chicken: Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side until the internal temperature reaches 165°F and the outside is nicely browned. Let it rest for a few minutes before slicing.

  5. Assemble the bowls: Start with a base of cooked rice or quinoa, then add sliced chicken on top. Spoon generous amounts of creamy tzatziki sauce, scatter the fresh veggies, and garnish with extra herbs or lemon wedges. Serve immediately and enjoy your fresh and satisfying meal!
